30 Days

A little over a week ago Clay and I embarked on a journey. A food journey to be exact.

We began our adventure with Whole30 on February 17th and we have already learned so much.

If you don't know what Whole30 is, it is basically a 30 day "diet" or "cleanse" where you cut out all sugar, dairy, grain, gluten, legumes, etc... to where you are left with basically just meat, veggies, fruit, nuts (some), certain oils, and unsweetened coconut. There's a lot more to it, but that's a simple overview of it. And let me tell you, it has already been quite the challenge.

I hate meal planning and cooking.

You would think because I'm such a planner and organizer that I would love meal planning, but I really don't. I would much rather just get home and whip something together out of whatever I have in my pantry or fridge. Week one of Whole30 was especially difficult. I nearly had a break down the day before we even started because I was up until midnight preparing food for the next day. Did I mention I'm not a huge fan of cooking?

It's not that I don't like being in the kitchen at all. I love to bake (which I can't do on Whole30) and I love to prepare food when we have guests but if it's just Clay and I really struggle with being motivated to make a meal every day; and with Whole30 I have to pretty much make 3 meals every day. No more cereal, mac n cheese, pizza, ice cream, lunch meat..all the delicious, terrible, wonderful, easy things I love. It takes a lot of meal prep and planning ahead to get the right kind of meals in for us every day and I'm hoping and praying that at the end of these 30 days I will be better about meal planning and healthy eating in general.

Clay and I are especially bad about eating veggies. Fruit, we love. Veggies....it's been a struggle. But in the past week since we have started this we have eaten so many veggies!

As we are about half way through our second week we are already noticing some things that the Whole30 team consider "no scale victories." Clay has noticed more energy, his skin clearing up, a want to be healthy, the want for veggies (gasp), among other things and we are only on day 8! I have noticed my skin starting to clear up and my stomach hasn't bothered me at all since starting this. Other than those two days when I realized I wasn't eating enough food to make up for all the bread carbs I wasn't eating. If you do this and have a faster metabolism please make sure you're eating enough!

Anyway...I'm excited to see how we feel at the end of the 30 days. I'm excited to see what we have learned and how our lifestyle will change for the better overall. I must admit, I used to be a whole30 and paleo hater. I felt like I was being judged for not eating healthier or for not jumping on the bandwagon, or that people were just doing it because it was the "it" thing. It's taken me quite a while to admit we needed a diet change and my family is all about the whole30 paleo thing lately, so here we are. Trying it out and enjoying it.
At least to a point ;)

Here's to the next 22 days! My prayer is that it brings Clay and I closer (since we spend so much time cooking together now) and that we learn and gain a better respect for the bodies God has given us.
